Notes
It’s as easy as 123 to create the perfect sponge by just by using the weight of the eggs in their shells.
Ingredients
- 4 eggs
- Caster Sugar
- Butter or Margarine
- Self Raising Flour
- Small pinch of Baking Powder
Instructions
- Weigh the eggs in their shells and make a note of the total weight.
- Weigh each of the following, the caster sugar, the butter or margarine and the self raising flour making sure they are each exactly the same weight as the eggs with their shells.
- Cream together the caster sugar and butter using a hand held whisk, until the mixture is light, fluffy and pale in colour.
- Beat the eggs into the creamed mixture one at a time using a wooden spoon.
- Add the baking powder to the self raising flour, fold the flour and baking powder into the egg mixture using a metal spoon.
- Divide the mixture between the 2 sandwich tins or fill the baking tin. Bake in the middle of the oven for 40 to 50 minutes, or until it is well risen, golden coloured and springs back when lightly pressed.
- Cool in the tins for 10 minutes before turning out on a wire rack and allow to completely cool before finishing with the topping and filling of your choice.
